VALLE OSCURU GOAT’S MILK CHEESE

This original goat’s milk cheese is made with pasteurised goat’s milk and yogurt ferments and cured for a minimum of 45 days. Ideal to serve in any circumstance: on its own, as a starter or to finish a good lunch or dinner.
Its semi-hard rind is etched by the holes where the serum exits the moulds. Its body has a clean cut very few eyes.

TASTING NOTES.

VISUAL: Light brown on the outside and bright ivory on the inside. Medium roughness and somewhat spongy, with almost no humidity, dry to the touch and slightly elastic. Clean and compact cut with small eyes.
OLFACTORY: Aromas rich in slightly bold and pungent milky nuances.
GUSTATORY: It has a sweet and full-bodied flavour on the mouth, revealing sharp peaks of flavour from the most lactic to the boldest fruit from its original fermentation with yogurt.
