Traditional sour curd cheese produced under the “Los Beyos” Protected Geographical Indication. It is one of the most relevant cheeses in Asturias.
A cheese made with 100% cow’s milk. It is a semi-acid body cheese with an irregular cut, slightly mouldy on the outside and somewhat greasy. It has a rough rind with a yellow-ivory cut, a tendency to flake, a fine and smooth touch and a texture without elasticity. With balanced, intense and very pleasant flavours and aromas, it is an exquisite cheese at its correct maturity point.
TASTING NOTES.
VISUAL: It is a small cheese, cylindrical in shape and quite tall compared to its diameter. Its irregular shape quickly denotes its artisan character. Cut tending to mash and pure white colour with an almost total absence of eyes.
OLFACTORY: Acidic notes are quickly detected as a consequence of its coagulation. Very pleasant on the nose.
GUSTATORY: Full-bodied on the mouth with exquisite aftertastes.
