LOS BEYOS P.G.I. GOAT’S MILK CHEESE

Cheese made with 100% goat’s milk. It has the peculiarity that it is made with milk from goats milked in the morning and mixed in the afternoon. Cylindrical in shape, clean rind and white cut with no eyes.
Protected under the Los Beyos Protected Geographical Indication, this cheese is the result of a lactic curd. The resulting pieces are generally small, about 400 g, and have an irregular and rough exterior appearance that quickly denotes the artisan craftsmanship of its production.

TASTING NOTES.

VISUAL: Rough and slightly mouldy rind. When cut, the natural “mash” of acid body cheeses with a medium-high curing is produced.

OLFACTORY: Very pleasant, acidic and fresh notes derived from the type of curd. More defined aromas at the optimum maturity point.

GUSTATORY: Very full-bodied on the mouth. Fresh acid notes. Complex and persistent on the palate with exquisite aftertastes.
