AFUEGA’L PITU P.D.O. CONE-SHAPE RED CHEESE

The Afuega’l Pitu PDO cone-shape red cheese is obtained from a slow lactic coagulation for about 15 to 20 hours. This whey is drawn off the curd in moulds with a cone shape, which is the Afuega’l Pitu Protected Designation of Origin trademark. After 24 hours, this primitive cheese is extracted from the moulds and kneaded again adding paprika, which gives it its characteristic orange colour and a spicy touch.
The AFUEGA’L PITU P.D.O. cone-shape red cheese is a surprising and unique cheese, produced in n extensive area of Asturias that includes some 13 councils.
This cheese is cured for a minimum of 60 days before going to market.
