CABRALES P.D.O. CHEESE

Cabrales PDO cheese is a blue cheese made from raw cow’s milk or a blend of these, cured for months in natural caves in the Picos de Europa National Park (in the Asturias mountains).
It is a creamy cheese at its optimum maturity point and is produced by more than twenty small producers from the Cabrales council and part of Peñamellera Alta. The Cabrales PDO regulatory council controls the production of the most famous of Asturias cheeses, setting requirements such as the obligation that the milk used in its production comes from farms within the production area; as well as its recognisable aesthetics, with the green metallic paper wrapper and the distinctive three-colour band that acts as a numbered label identifying the regulated production of this cheese.

WHAT IS CABRALES CHEESE LIKE?
It is a creamy cheese with a powerful and spicy flavour depending on its maturity point. Visually, it has practically no rind, yellowish/white in colour with homogeneous distribution of the penicillium fungus blue/green streaks.
