AFUEGA’L PITU P.D.O. CONE-SHAPE WHITE CHEESE

The Afuega’l Pitu PDO cheese is the Asturian cheese with Protected Designation of Origin with the highest production territory; produced in up to 13 councils.
This white Afuega’l Pitu PDO cone-shape cheese is made with pasteurised cow’s milk from farms in the production area, which undergoes slow lactic coagulation for 15 or 20 hours.
The curd obtained is placed in the characteristic cone-shape moulds using a gravitational method, where this cheese spends the first 24 hours until most of the whey disappears.
The cheese is cured for a minimum of 60 days and has a certain floury texture.

TASTING NOTES.

Visual: Attractive, intense white colour that reveals its young and fresh character. It has a clean cut with no eyes. Its cone shape, derived from the traditional gravity pressing method, is one of its clear distinctive features.
Olfactory: Its aroma has a light touch of ferments that predominates and a lactic point is noted as a preamble to the pleasantly acid tone that is surprising on the mouth later.
Gustatory: At first, the acidity on the mouth along with the sandy texture is surprising, it then has a pleasant flavour suitable for everyone.
