LA PERAL COW’S BLUE CHEESE

La Peral is a cheese made from pasteurised cow’s milk, straw-white in colour, with milk ferments and selected noble moulds that give it its characteristic bluish stains. When it is young, it is a semi-blue cheese, with a delicate flavour and a great bouquet. As the days go by, it completes transformation into a blue cheese, acquiring all its personality, slightly spicy, but without losing its creaminess.

TASTING NOTES.

VISUAL: It is a semi blue cheese, presented in an aluminium foil covering that prevents appreciation of the piece on first glance. Once cut, it reveals its straw-white colour with frequent blue-green penicillium incrustations.
OLFACTORY: A highly aromatic cheese at room temperature. Intense aromas, but very clean.
GUSTATORY: Medium intensity, very creamy on the palate and sometimes slightly spicy. A little salty.
