VARÉ ORGANIC COW’S-MILK CHEESE

Extraordinary organic cheese produced in Asturias made from raw cow’s milk. A high-quality cheese endorsed by the Asturias Principality Organic Agricultural Production Council (COPAE).
This organic cheese made from Varé raw cow’s milk is a pressed-body cheese that is cured for about 60 days. The milk used to produce this cheese comes from the organic livestock in La Roza, a town that it is located in eastern Asturias, in Nava.
This cheese was first produced in 2002 in this cheese factory located in the council of Siero, where cheese production began in 1993.

TASTING NOTES.

VISUAL: This Asturias Varé raw cow’s milk cheese is in a traditional cylindrical format. When cut, it presents very few eyes and has a clear yellow colour that becomes more intense toward the edges of the piece as a result of its curing, rarely having a rind.

OLFACTORY: In its olfactory notes, the cheese is clearly lactic with very balanced bitter touches and subtle buttery nuances from careful curing and also the size of the piece.

GUSTATORY: This is an Asturias artisan cheese made with raw cow’s milk and tastefully presented with character, although very balanced, it melts in the mouth and has a pleasant and long, warm aftertaste with occasional forest fruit notes due to the careful feeding of the cattle from which the milk of this excellent Asturias cow’s milk cheese comes.
